Maintenance, scratches, and realities
Steel lives through use. Fine hairline scratches will appear where glasses and ceramics are placed; they are part of the material's honesty. You can minimize them by placing items gently and by avoiding dragging rough bottoms across the surface. Small marks can be toned down with a non-abrasive metal polish made for stainless steel; always test on the underside first, and polish lightly in the direction of the grain. Deep scratches are difficult to remove completely without re-coating or re-grinding; accept them as a discreet patina that will become more uniform over time.
Fingerprints are effectively removed with a lint-free cloth lightly dampened with isopropyl alcohol, followed by a dry wipe. When cooking with salt or acidic ingredients, a simple rule applies: wipe up spills when you see them. This prevents watermarks and so-called "tea-staining" from standing moisture.
A steel shelf doesn't require more care than other kitchen materials; the difference is that it tolerates honest use and can always be restored to a clean, functional appearance without special treatment.
